Are all extensions included with template down load, I want to change an existing site to this template so I do not want to do a quick start and wipe out everything. I can work thorough the content , module names , etc. and keep most of it.

Template Settings support many options allow to custom template without coding skills.
And template come with Quickstart package which you just install it to get template and sample data like exactly our demo site.
And yes, template come with all modules like our demo site.
Quick Start packages will delete all content from what I have experienced. What if I want to change an existing site to your template and all extensions? Is that possible or must I start a new site to use this template?

If you want to use template for existing website with content, please use Template Install Package instead for Quickstart package. And separate install extension for your website such as slider, portfolio module, etc. All extension already mentioned in the document.
