Where can I find documentation about the location of the forms and other information about the logo or the setting of the various modules as well as for AS Design?

In download package, you can see file 'documentation.zip', just unzip it and open file 'index.html'.
About details instruction, you can change homepage content and pages under menu item 'Pages' via Admin > SP Page Builder.
Slider function via Admin > Component > United Revolution Slider 2, edit 'Home' slider.
Portfolio module image and content by go to Admin > Component > SP Simple Portfolio.
Any other content is just normal module, normal article and component in Joomla!.
